The rayleigh correction algorithm used in Satpy and Geo2Grid does not apply to bands above a certain wavelength. This is because rayleigh scattering does not effect bands at wavelengths that high so trying to correct for it produces a negligible difference (at least that is my understanding as a programmer and not a scientist). So, you could remove the rayleigh_corrected part of your B04 and B05 composites since they aren't doing anything. If you'd like to discuss this with the algorithm developers I suggest joining the Pytroll slack which I think I've recommended earlier in this thread.

Resampling is needed because the band resolutions are different so to combine information from B01 and B03 (needed for rayleigh correction) we need to resample. The resampling is automatically done as part of Geo2Grid, but due to the way the processing is structured you get the warning first and then Geo2Grid fixes it (by resampling). By default it uses what I call "native" resampling which will replicate pixels to make the band resolutions match, but keep the data in the native projection. You could also use nearest neighbor resampling to resample to your own custom grid or one of the grids provided as part of Geo2Grid. This functionality is documented in the user guide and Geo2Grid website if you'd like more information.
